My InterpretationTo touch on what robbnthahood said. I think the "still" plays an integral part in the song, because when you make moonshine you use the "still" for distilling all the impurities out of the alcohol. First off its illegal to make moonshine, and it's typically done in the back "woods" as to not be discovered or tampered with.

First, I think that the woods help to amplify how Iver feels about his mind. The beginning of this song presents the central conflict which is the fact that Bon Iver is going in two opposite directions which threaten to tear him in half. Up in the woods, and down on his mind. Thinking of the word "woods" by itself isn't necessarily a positive term.

The way you love me is frightening I better knock on wood, baby I got superstitious about you but I can't take a chance You got me spinning, baby, spinning in a trance But your love is better than any other love I've known It's like thunder, lightning The way you love me is frightening You better knock on wood, yeah.
